As few additives as possible, more natural processes: this is the principle behind every Molino di Rovescala wine.
At the Molino for red wines it was decided to recover the use of concrete tanks: a manual and demanding process, but which allows micro oxygenation and a better balance in terms of stability. All the aromaticity is preserved, without intermediate decanting.
For whites wines, the wine vessels are made of steel and each is combined, proportioned to the size, with a vineyard, for the best possible yield based on the quantity of each grape.
Fertilizers are natural and come from neighboring cattle farms: balance, respect for the environment, sustainability are the ideals that lead each process.
